Chicken fried rice has to be my favorite dish when ordering take-out and let’s just say there isn’t very many leftovers when it comes to rice. It is the only grain that I could eat at every meal if I had to but when making fried rice at home, it just never had the right texture and it usually ended up soggy for me.
This chicken fried rice recipe from Winkgo is the closest I found to getting takeout-style chicken fried rice at home and I just love making it. Personally, I like it with 1/2 cup of peas instead of a full cup but that is what makes fried rice so great. You can substitute whatever you like as long as you keep the ratio of rice, meat, and vegetables fairly consistent.
- 4 cups cold, cooked rice
- 1 1/2 cups boneless chicken, diced (once diced, marinate the chicken with 1/2 tsp salt, 1/2 tsp sugar, 1/2 tsp soya sauce, and 1 tsp water for a few minutes)
- 2 eggs, beaten
- 4 Tbsp oil
- 3 Tbsp soya sauce
- 1 cup frozen peas, thawed
- 2 green onions, chopped
