Mango Sticky Rice

Mango Sticky Rice Recipe

Ingredients

  • 2 tablespoons Sugar
  • ½ can Coconut Milk
  • 1 Mango, cubed

For the rice:

  • 1 cup Sticky Rice
  • 1 cup Water
  • ½ can Coconut Milk
  • ¼ teaspoon Salt
  • 1 tablespoon Sugar
  • 1 Star Anise

Instructions

    1. In a pan add 1 cup of sticky rice and 1 cup of water.
    2. Leave to soak for 30 minutes.
    3. Add ½ cup of water, ½ can coconut milk, ¼ teaspoon salt, 1 tablespoon sugar, and 1 star anise.
    4. Bring to boil.
    5. Cover and simmer for 20-30 minutes until liquid is absorbed.
    6. Remove star anise.
    7. In another pan add 2 tablespoons of sugar and ½ can of coconut milk.
    8. Warm gently stirring to dissolve.
    9. Put to one side.
    10. Serve sticky rice and add 1 cubed mango.
    11. Drizzle over with coconut milk and enjoy!
