Ingredients

  • 3 cups of dried pasta
  • 1 red onion, sliced
  • 2 garlic cloves, crushed
  • 1 ½ cups of sugar snap peas
  • 3 sliced carrots
  • 1 red pepper, deseeded and chopped
  • 1 cup of sweet corn
  • 1 large kale
  • 1 ¼ cups of baby plum tomatoes
  • 1 basil
  • 4 tablespoons of tomato puree
  • 1 tablespoon of balsamic vinegar
  • 3 cups of tomato passata
  • 2 ½ cups of vegetable stock

Instructions

    1. In a pot add dried pasta, red onion, garlic gloves, sugar snap peas, carrots, red pepper, sweet corn, kale, baby plum tomatoes, basil, tomato puree, balsamic vinegar, tomato passata, and vegetable stock.
    2. Mix all ingredients and cook on high for 2 hours.
    3. Serve and enjoy!
