Sweet Potato Quesadillas

Ingredients
- 2 medium-sized sweet potatoes
- 150 ounce can of chickpeas
- 3 tablespoons hot sauce
- ½ cup nutritional yeast
- 8 large flour tortillas
- Salt
- Pepper
Instructions
- Bake potatoes at 400 F for 40-50 minutes.
- Cut in half and scoop them out.
- Place them in a blender with chickpeas hot sauce and nutritional yeast.
- Add salt and pepper.
- Blend to a thick puree.
- Place the puree into a tortilla and cover with another.
- Cook in a frying pan for 2-3 minutes on each side.
- Cut into 6 pieces.
- Serve and enjoy!
