  • 4 Bell Peppers, halved
  • 2 cups Cauliflower Rice
  • 15 oz can Mixed Beans
  • ½ cup Vegan Cheese, shredded
  • 1 cup Marinara sauce
  • Salt
  • Pepper


    1. Remove the seeds.
    2. Microwave cauliflower rice for 2 minutes.
    3. Add mixed beans, vegan cheese, marinara sauce, and season.
    4. Mix all the ingredients together.
    5. Stuff the peppers and sprinkle over vegan cheese.
    6. Bake at 350 F for 20-30 minutes.
    7. Serve them with marinara sauce and enjoy!
