Mango Sticky Rice

Ingredients
- 2 tablespoons Sugar
- ½ can Coconut Milk
- 1 Mango, cubed
For the rice:
- 1 cup Sticky Rice
- 1 cup Water
- ½ can Coconut Milk
- ¼ teaspoon Salt
- 1 tablespoon Sugar
- 1 Star Anise
Instructions
- In a pan add 1 cup of sticky rice and 1 cup of water.
- Leave to soak for 30 minutes.
- Add ½ cup of water, ½ can coconut milk, ¼ teaspoon salt, 1 tablespoon sugar, and 1 star anise.
- Bring to boil.
- Cover and simmer for 20-30 minutes until liquid is absorbed.
- Remove star anise.
- In another pan add 2 tablespoons of sugar and ½ can of coconut milk.
- Warm gently stirring to dissolve.
- Put to one side.
- Serve sticky rice and add 1 cubed mango.
- Drizzle over with coconut milk and enjoy!
